Before heading to the outer islands, stop here. Ishigaki's covered market arcade is where the Yaeyama chain concentrates its flavors: sea grapes, island tofu, Okinawan sea salt, the flat noodles specific to Yaeyama soba. The vendors know each other. The stalls have been in the same spots for decades. It is not remarkable in ways that photographs capture, and entirely remarkable in ways that food does.
