On the twentieth of June, 2025, sake from Aomori received a geographical indication. The conditions are set out precisely. Rice and rice koji must come only from rice harvested in Aomori. Water must be drawn only within Aomori. Brewing, storage, and bottling must all happen inside the prefecture. And the sake must be one of the designated named grades, ginjo through to tokubetsu honjozo.

The climate note in the standard is the part I keep coming back to. Winters at the northern end of Honshu are severe, and the document says this suits ginjo brewing, where fermentation is held at low temperature and allowed to run slowly.

That is a cold place describing its own cold as a qualification rather than a difficulty. Not a hardship to be overcome with expensive equipment, but the specific reason the method works here at all.

In the glass there is a moderate rice flavor, a round mouthfeel, and a finish that clears quickly. The ginjo grades carry fruit on the nose, melon and apple, and end with a tightness rather than a lingering sweetness. Nothing about that description would tell you where it came from. The rules, on the other hand, are entirely about where.
